New York City’s Meat Packing District, bounded by Washington, West and 14th Streets, was once home to scores of wholesale meat distributors. Over the past decade, gentrification, development and the Highline park and hotel have seemingly turned the area into yet another Manhattan theme park. But a handful of companies still receive carcasses, butcher them, and sell the product to New York’s restaurants, and in the hours between 3 AM and dawn, the area reverts to it’s industrial past.
